Lunenburg Sausage

One of our regions most popular traditional foods.


4 lbs. of pork3 lbs. of beef1 oz. black pepper1/8 cup ground coriander1 1/2 tablespoons salt1 1/2 teaspoons allspice2 teaspoons summer savory

Grind the pork and beef together, add spices, and mix thoroughly, put ingredients back in the mill and roll on casings, fill sausages, twist them according to length desired and hang for a few hours in a cool place. Cook or fry with Sauerkraut. A real delight.
